15-Minute Tom Yum Noodle Soup

Ingredients

200g Vermicelli Noodles
1 1/4 cups water
1 stalk lemongrass, pounded and bruised
5 kaffir lime leaves, bruised
1 small knob fresh ginger, grated
1/2 small tomato, cut into 4 wedges
4 large prawns, shelled and deveined
6 mushrooms, sliced
1 1/2 tablespoons Nam Prik Pao
1/2 tablespoon fish sauce
1 1/2 tablespoons lime juice
Coriander leaves, for garnishing

Method

Step 1 Prepare the noodles according to package instructions, drain and rinse with cold water. Set aside.
Step 2 In a small pot, bring water to a boil. Add in all the aromatics, prawns, mushrooms, and nam prik phao. Simmer uncovered until the prawns are cooked through. Remove from heat and add the fish sauce and add lime juice. Stir well.
Step 3 Divide noodles amongst serving bowls, pour the soup over the noodles and top with coriander leaves before serving.

Tip

Nam Prik Pao is a thai roasted chili paste and can be found in the international aisle of the supermarket or Asian grocers.
