Chia Egg Bites

Ingredients

3 tbsp chia seeds
1 cup cooked greens (ie spinach and broccoli)
4 eggs + 4 extra egg whites
1 large tomato, diced
1 spring onion, chopped
2 tbsp fresh parsley, chopped
Salt and pepper to taste
Spray olive oil

Method

1. Preheat the oven to 180 degrees C.
2. In a medium sized bowl, whisk together the eggs and chia with salt and pepper.
3. Fold in greens, tomato, onion and parsley until just combined.
4. Lightly spray a muffin tin with oil.
5. Divide mixture into muffin tins and bake for 30 minutes or until set.
