1 wholemeal English muffin
1 large egg
3 tablespoons capsicum, finely chopped
1 teaspoon pesto
20g fresh parmesan cheese, grated
Step 1 Toast English muffin.
Step 2 In a small saucepan, boil your egg.
Step 3 Spread pesto on the muffin, top with capsicum, then your egg.
Step 4 Top with the remaining English muffin half. Enjoy.
