2 cups low fat Greek yoghurt
1/2 Lebanese cucumber
2 tablespoons roasted garlic puree
2 tablespoons lemon juice
10 fresh mint leaves, chopped
2 tablespoons olive oil
Salt to taste
Vegetable sticks to serve eg. Carrot, Capsicum, Celery, Green Beans
Step 1 Grate the cucumber, squeezing out excess water. Add yoghurt, garlic, lemon juice, mint and olive oil. Mix until combined.
Step 2 Season to taste with salt. Serve with vegetable sticks.
