Summer Breakfast Tacos

Ingredients (serves 2)

2 large eggs
2 small tortillas
1/2 avocado, thinly sliced
1 shallot, thinly sliced
5 large cherry tomatoes, chopped
1/4 cup chopped fresh coriander
1/4 cup mild salsa

Method

Step 1 Heat a large non-stick skillet over medium heat.
Step 2 Lightly beat the eggs and pour in the skillet. Stir and toss until the eggs cook.
Step 3 Warm the tortillas as per packet instructions.
Step 4 To assemble add the eggs to tortillas, then top with avocado, tomatoes, shallots, coriander, salsa, and a touch of pepper.
