4 small sweet potatoes (100g each)
1 clove garlic
1/2 red onion, diced
1 can black beans (375g)
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 bunch spinach
8 cherry tomatoes, halved
Pepper
3/4 cup grated low fat cheddar cheese
Step 1 Prick the potatoes with a fork all over, and microwave on high for 16 to 18 minutes, until tender.
Step 2 In a large, non-stick skillet over medium heat, cook garlic and onion until lightly golden. Add the beans, cumin, cayenne, and 2 tablespoons water, and cook for 2 minutes until heated through. Add the spinach, tomatoes and pepper and cook for 2 minutes until spinach is wilted.
Step 3 Halve the potatoes and divide bean mixture between them, sprinkle with cheese. Grill for 2 minutes until cheese is melted and serve!
