1/2 tablespoon honey
3 teaspoons low-sodium soy sauce
4 x 100g skinless salmon fillets
Black pepper
1 red capsicum, thinly sliced
1 tablespoon chopped fresh ginger
3 bunches spinach, thick stems removed
1/2 tablespoon toasted sesame seeds
Step 1 Combine honey and 1 teaspoon of soy sauce in a small bowl.
Step 2 Season the salmon with pepper and place on a foil-lined grill. Grill for 5 minutes. Baste with the honey mixture and grill for another 2-5minutes, until the salmon is opaque.
Step 3 Place a large non-stick skillet over medium-high heat. Add the capsicum and toss until just tender (about 4 minutes). Stir in the ginger.
Step 4 Add the spinach and cook, tossing, until wilted. Add the remaining 2 teaspoons of soy sauce. Serve with the salmon and sprinkle with the sesame seeds.
