Mediterranean Tuna Lettuce Wraps

Ingredients

350g Tuna in spring Water
1/2 cup kalamata olives, roughly chopped
1 cup reduced fat feta cheese
2 Small capsicums, chopped
1/2 red onion, chopped
1 can chickpeas, rinsed and drained
Zest and juice of one lemon
1 tbsp dijon mustard
1 tbsp extra virgin olive oil
2 tsp fresh mint, chopped
Pinch salt
1 carton grape tomatoes, halved
1 medium avocado
Half iceberg lettuce

Method

Step 1 In a large mixing bowl add tuna, olives, feta, capsicum, red onion, chickpeas, lemon, mustard, olive oil and salt. Stir well to combine.
Step 2 Add tomatoes and gently fold into the mixture.
Step 3 Divide tuna mixture into large pieces of lettuce, and wrap up. Enjoy!
